Goodnow Farms Chocolates: Putnam Rye Whiskey and Black Urfa Chili
To create our premium single-origin craft chocolate bars, Goodnow Farms seeks out farmers who grow cacao beans with the greatest flavor potential. Their search has taken them to remote villages and small family farms throughout Latin America.
They've been rewarded by discovering extraordinary producers of fine flavor beans. Goodnow Farms always trade directly and pay a premium well above commodity prices for all our beans.
Goodnow Farms: Our chocolate stays True to the Bean™
We make single-origin chocolate, which means we use beans from one farm or region to create each variety of bar. We do this because different cacao beans, much like wine grapes or coffee beans, have different flavors. Discovering these amazing flavors is one of the true joys of eating single origin chocolate bars!
Being very particular about the cacao beans we select is just the beginning of our quest to make an intensely flavorful and smooth chocolate bar. Here at our New England farm, every step of our process is designed to bring out the full flavor potential of each distinctive type of bean. We roast beans in small batches according to our exacting flavor profiles, carefully modifying these profiles for each type of cacao. We even take the extra step of pressing our own single origin cocoa butter for each variety of Goodnow Farms chocolate. The result is award-winning premium craft chocolate that always stays true to bean!
***Available flavors: Putnam Rye Whiskey and Black Urfa Chili
Putnam Rye Whiskey:
We use 55 bottles of Boston Harbor Distillery’s distinctive “Putnam Rye Whiskey” to craft this Special Reserve chocolate, giving this bar an intense whiskey flavor like no other!
We start by steeping nibs from our award-winning bar in whiskey for several days, which allows the nibs to absorb the complex flavor notes of the rye. Since chocolate and water don’t mix, we then allow the nibs to dry completely before putting them in our stone grinders to create this incredible bar. For this bar we also fresh press our own single origin Esmeraldas cocoa butter. This exceptional step makes the bar exceedingly smooth & intensely flavorful… as well as truly single origin.
Black Urfa Chili:
Our Black Urfa Chili bar is another flavorful collaboration with our friends at Burlap and Barrel. Ethan Frisch and Ori Zohar are as passionate about sourcing single origin spices as we are about sourcing single origin cacao! They visit the farms personally, trade directly with the farmers, and find unique spices available nowhere else.
We’ve wanted to release a spicy bar for a long time. Most of the chili peppers we tried added only heat, and we wanted something more. We found it in the Urfa Chili, which boasts many complex flavors due to the fermentation process it undergoes after harvesting. We’ve paired it with our single origin Zorzal Communitario cacao from the Dominican Republic.
